A few weeks ago I made some amazing cornbread with some yellow polenta I purchased from an Italian Delicatessan & Cafe in Warrawong, NSW. The bread was so light and fluffy that we went through two loafs in no time. It is delicious hot or cold and the older the loaf got the more tasty it was, the texture changing to a crusty bread with a really unusual texture from the polenta flour in the mixture. This recipe makes two loaf pans and it freezes well.

1 cup gluten free flour (I used white maize meal but you could use one of a number of gluten-free flours listed)
1 cup yellow polenta
1/4c sugar or alternative (the first time I used raw sugar and the second I used agave syrup which has lower GI and tastes great)
2tsp cream of tartar
1tsp baking soda
1tsp cornflour
3/4tsp salt
1/4cup butter (or coconut oil)
2 eggs (or Orgran Egg Substitute)
1 cup buttermilk (or rice milk for dairy-free)
Combine and fill two loaf pans and bake @ 220oC for 25 min

Note: To make this recipe gluten free it is important to use baking soda, cream of tartar and cornflour rather than baking powder.

After much deliberation I have decided to hire a stall at the Shellharbour Village Markets, starting on August 9th and once a month on the second Sunday thereafter. I will be selling gluten free biscotti, (chocolate biscotti and biscotti with pistachio), my world famous butter shortbread and some cannoli with a sweet ricotta cheese filling. I have been making butter shortbread since I was a teenager and it is much requested by friends and family. The gluten free biscotti is inspired by my visit to Tutti in Italia, Italian Day at Wollongong Mall earlier in the year and I will be selling hot chocolate as well, the perfect accompaniment and is sure to warm me up as I man the stall from 9am until 2pm.

I will also have my photography portfolio and some samples of my work in commercial, food and portrait photography and I will be offering special packages including glamour photography sessions and 3, 6, 9 and 12 month baby portrait sessions.

Over the next week I will be trialling three varieties of gluten free biscotti
  • one with cornmeal, cornflour and xanthum gum and pistachios
  • millet flour, buckwheat flour, quinoa flower and cranberries
  • another with millet flour, buckwheat flour, quinoa flour and unsweetened cocoa
I'm also testing out a recipe for Cannoli filled with ricotta from the Womens Weekly Italian Cookbook. I'm a big fan of Cannoli since my first visit to Tonitto Continental Cakes in Port Kembla and I love ricotta cheesecake so I'm excited about the combination.

I've missed out on a lot of late due to poor health and I'm glad to be getting back into the swing of things. Bring on Spring!

Quick and Easy Avocado dip with Garlic Pappadums
My husband came home with some garlic pappadums and within seconds in the microwave we had hot, garlicky flavoured pappadums which fulfil the need for that savoury crunch and texture that I had been missing.
What are Pappadums ?
A wafer-thin East Indian bread made with LENTIL flour. This Tortlla like bread can be unseasoned ( as preferred in southern India) or variously flavored with red or Black pepper, garlic or other seasonings, as in Northern India. Pappadums are available various sizes and flavours.

Tonight I decided to make some of my avocado dip. serving it in the avocado shell and teamed it up with the pappadums. Delish!
Quick and Easy Avocado dip


A lazy cook's guacamole made from avocado, lemon juice and salt and served in the shell of the avocado with the seed placed on the bottom to help keep it fresh. Served with papppadams that were made in the microwave.

Lightly brush one side of the Papad with low fat oil. Place one Papad at a time on a paper towel, then microwave for approximately 60-90 seconds. The perfect dip accompaniment and only take a few seconds to turn from a flat disk to a delicious crisp dipping scoop.
