A little while ago I received an email from Paddy Murray with information on a Sourdough Bread Making Course I was interested. If you attend please take some photos and write a review for Illawarra Food and I'll send you a $20 gift voucher for your efforts!

Hi there, just letting you know about my last sourdough course for the year. New is my inclusion of making pancakes and muffins including the famous Russian Blini pancake in addition to the basic theme of how to make bread. Blini are a traditional savoury pancake made from either buckwheat or potato  and topped with savory foods such as smoked salmon or olives and feta cheese. The authentic blini is made with sourdough culture. Attached a couple of images that are available to be used.
Below some words about my next course: Feel free to contact me if you require further information. Paddy

Sourdough baking is not just about bread it was also the traditional way of making pancakes, blini and muffins. Knowing how to maintain a viable sourdough culture is essential and is an important part of Paddy’s course on sourdough bread making. He now includes instructions for making pancakes and muffins in his course as well as the famous Russian blini pancake. ‘Once you have a good culture you can make an amazing variety of tasty and healthy foods’.  Learning to make sourdough bread is very hard just using books and recipes. There are tips and tricks that can only be learnt through hands on demonstration and then it is easy.
Paddy supplies a culture originally from Austria that has proven its worth over the years for sourdough baking in Australia. Recipes for San Franciscan sourdough, whole-wheat and European ryes are covered in the day long course.

His next course in Bundanoon is on Sat Nov 3d from 10am to 3pm. He can be contacted on 0427837830 or email padriacmurray@gmail.com. Many bakers, chefs and home bakers have learnt to make sourdough breads at Paddy’s courses.

Ever since the news article on Pomegranates as a superfood I have been eating them or drinking the juice at least once a month. Several of my photos of pomegranates have been used in magazine and newspaper articles around the world. One such article is by Avocado magazine which featured my heart shape made out of pomegranate seeds above.

[ Photo of pomegranate heart published in Avocado magazine ]

In Pomegranates: 70 Celebratory Recipes By Ann Kleinberg she writes:
"The culinary and mythological virtues of pomegranates have been extolled in art and literature since the time of the ancient Greeks, and these days the fruit is enjoying the spotlight as one of the hot new culinary trends. Famed for its tart, refreshing juice and for its symbolism of royalty and fertility, the pomegranate is guaranteed to perk up almost any meal. Whether an integral part of a dish’s composition or adding a bit of color and surprise as a garnish, pomegranates bring beauty and stimulating flavor. Pomegranates offers the natural and cultural history of the pomegranate throughout the world; gives tips on how to buy, eat, and use this delectable fruit; and then dishes up a comprehensive collection of 70 pomegranate recipes. More and more people seem perfectly happy to wrestle with this amazing fruit to experience its hard-gotten but ultimately satisfying taste treasure."

If you love the flavour of pomegranates but hate how fiddly and messy they can be then I heartily recommend you spend the five dollars or so on some Pom juice. It is a great addition to a cocktail, juice blend or nice way to start the day with a nip of pomegranate juice. My favourite is POM juice but there are others out there, including Bickford which isn't as sweet as POM.

Taste of Summer - Pomegranate fruit by you.

Robert A. Newman, M.S., Ph.D. writes:
"If you're wondering why an entire book is devoted to one fruit, the pomegranate, wonder no more. With its complex qualities, including its highly concenrated supply of antioxidants, its ability to regulate hormones, and its antibacterial, antifungal, and antiviral qualities, this fruit stands out in high profile, even among all the marvels of contemporary natural medicine and therapeutic nutrition. This book investigates why the pomegranate deserves to be called "The Most Medicinal Fruit" and discusses how pomegranate can help: reduce the risk of various cancers, cardiovascular disease, and stroke; slow or prevent the harmful effects of chronic inflammation and oxidation; prevent postmenopausal conditions in women and prostate problems in men; maintain brain function, joint health, and a strong immune system; prevent Alzhemier's disease, osteoarthritis, and infection. After many centuries in which the pomegranae's medical usefulness was revered, but then forgoten in the stampede of pharmaceuticals, the pomegrnate is again approaching center state as a modern-day fountain of health."

Sydney LETS (Local Energy Trading System) is an alternative trading network made up of individuals who trade goods and services using a community currency called “Operas” instead of federal dollars.

LETS Mission
To improve members’ quality of life by providing, managing, promoting and supporting an alternative trading system.

Better than Barter
Barter is a simple one-to-one exchange - I cook for you in return for you digging my garden.
LETS is different - I cook for John; John digs Mary’s garden; Mary cuts Joe’s hair; Joe fixes Lenny’s car; Lenny sells me vegetables and so on around the system…
Each of these trades is paid for in operas and recorded in a central ‘bank’.

Why join?
Non exploitative, non profit, strengthens community values and relationships, promotes self-sufficiency and supports sustainability, prevents stuff from going to landfill, gets neglected jobs done, potential to inter-trade with other LETS communities, meet like minded people, build and be a part of the local community.

Trade is no longer limited by the availability of cash
LETS is a “parallel economy” supporting local communities and empowering individuals.

Please read on to learn all about how to turn your time, skills and goods into local currency.

One of the things I have been learning of late (both on tv shows such as River Cottage Autumn, web-based organisations such as Slow Food) is the importance on sourcing local food suppliers. We all know that fresh is best and the shortest distance between supplier and our dinner plate the better. That's why I love visiting fresh food markets such as the Shellharbour Village Markets, Kiama Produce Market and Wollongong Produce Market, .

Shellharbour Village Craft Markets
Held every second Sunday 9.00am til 2.00pm in the grounds of Shellharbour Public School
Mary Street SHELLHARBOUR NSW 2529.
2009 dates include May 10th, June 14th, July 12th, August 9th, September 13, October 11th, November 8th, December 13th. Be sure to mark them on your calendar!

Kiama Produce Market
Wonderful market held on the fourth Saturday of every month. Stalls including fresh and cured fish, meats, fruits and vegetables, cheeses and nuts, wines and other gourmet foods.

Wollongong Produce Market
is held every friday in Crown Street Mall, Wollongong. Stalls of note include the fresh fruit and vegetable stall, Razorback Grove Olives (producers of fresh olives, olive oil and cheeses), fudge, fresh herb plants and assorted arts and crafts.Note: If you know of any Illawarra fresh produce markets or suppliers of fresh produce who sell direct to the public please let me know!

Each year I look forward to Viva La Gong festivities and this year's favourite event was the Wollongong Multicultural Fest (October 2008). One of the many food stalls featuring fare from all over the
world was Tamarind Tree Curries.

I was feeling rather peckish and settled on a Spicy Rice with Daal and Spinach Curry which, with a little seasoning of salt and pepper, was delicious. It was full of flavour and not too heavy like many curries I have eaten. It was served with some Roti (Sri-lankan bread that was very tasty and great to dip in the curry sauce.

The smells of the stalls were heavenly and as I waited to be served I took some photos of the display of authentic herbs and spices.

On October 17th, 2006 I celebrated my 35th birthday. It was quite a milestone so I decided to spend my day enjoying Taronga Park Zoo's 90 cent entry for birthday boys and girls (part of their 90th birthday celebrations) and then at night made our way to the Night Noodle Markets in Sydney's Hyde Park. It was a magical experience for me, my first night market but certainly not my last.

If you missed it, there is good news - it is on again this year and, weather and health permitting, I will be there on my birthday to once again celebrate growing older with a party environment that is intoxicating. Thousands of people coming together to sample foods from all over the world, sample beers and wine and appreciate the wonderful City of Sydney. What more could a birthday girl ask for?

Here are some photos from last year's Good Food Month, Night Noodle Markets 06
